Salvia officinalis
A shrubby evergreen perennial that forms many velvety-textured, wrinkled, gray-green leaves about 2" long with edible blue flowers in summer. Harvest Sage before the plant flowers. The aromatic leaves are perfect seasoning for Thanksgiving dressing, stuffing, sausage or meatloaf. To dry, gather sprigs, tie in a loose bundle, hang upside down in a cool, airy place away from direct sunlight. When dry remove leaves from stems and store in airtight container.
