Harvest leaf lettuce as soon as it begins producing leaves longer than 5 or 6 inches. Cut leaves from the outside of the plant so the main part of the lettuce continues to produce new foliage. Harvest your lettuce in the morning, after the plants have had all night to become plump with water. Before using, rinse lettuce thoroughly with cool water, shake or pat dry with paper towels to remove excess moisture and store in plastic bags in the refrigerator.
