This sweetly fragrant annual herb with light purple flowers in summer is related to oregano but has a sweeter, milder flavor. Bushy plants produce small round, pale, grey-green, velvety, aromatic leaves. Some describe the flavor as having a hint of balsam. Pick the young, tender leaves as they are best for flavor. Pick them in the morning when the oils are strongest. Use fresh or dried in meat or tomato based dishes, pasta or to flavor oil or vinegar.
