This heirloom tomato originated in the hills of West Virginia in the 1 B00's. The colorful fruits are large, round, heavily ribbed and can weigh in between 1-2 pounds. The outer skin and flesh are orange-yellow with streaks of red throughout. The flavor is very sweet with fruity flavors and low acid. It has very few seeds, in fact it is almost seedless giving the flesh a dense meaty texture. Hillbilly are heat tolerant, crack resistant and high yielding. Sliced they are the perfect size for sandwiches or a burger. The unique flavor pairs well with soft cheeses and herbs like rosemary and basil and adds great color and texture to bruschetta.
